These Viognier grapes were carefully selected on a hillside just around the corner from the Grenache grapes that we picked in 2024 for the Rosé. These grapes were so complex and full of flavor right off the vine, I knew they were bound to make a exquisite white wine. I couldn’t resist taking advantage of such natural purity and incredibly happy grapes. After being hand picked from the vines, these grapes went straight to the press at 24 BRIX ripeness, and fermentation was able to happen naturally, which was a nice surprise. After just 4 months in French Oak barrels, she was ready to go. Bottled Monday, February 2nd at 8:45am.
